Easy Ice Cream Cookie Sandwiches

July is National Ice Cream month and in celebration we are sharing our easy ice cream cookie sandwich recipe that is sure to please anyone screaming for ice cream.  All you’ll need is a couple of supplies and ingredients to enjoy a nice semi-homemade ice cream cookie sandwich. These are perfect for cooling off on a summer day or sharing at your next party!

Recipe makes 8 sandwiches
Ingredients:
Soft baked cookies (16 count)
Ice cream (48 oz tub)

Optional topping ideas:
chocolate chip cookies, chopped pecans, chopped walnuts, sprinkles or M&Ms

Supplies:
Ice cream scooper
Plastic wrap or aluminum foil for storing

Instructions:
Place one scoop of ice cream onto the bottom side of a cookie.  (be sure to start with ice cream straight out of the freezer, the colder the ice cream the easier it is to make sandwiches)
Gently press another cookie on top to create a sandwich
The ice cream will press out the sides a little so you can roll your sandwich with additional toppings such as chocolate chip cookies, chopped nuts or sprinkles.
Enjoy immediately or wrap each sandwich with plastic wrap or aluminum foil and place in freezer to enjoy later
