Pride Day Cookies
  • 6 tablespoons soft unsalted butter
  • ½ cup sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 ounces pasteurized egg whites
  • 1 teaspoon vanilla extract
  • 4 cups confectioners' sugar
  1. You will need heart-shaped sugar cookies, in the largest heart you can find. Mine was about 3 x 4 inches. Use a standard cut out sugar cookie recipe. When cutting sugar cookies, keep the dough a bit thick. Or you can purchase pre-made unfrosted cookies.
  2. You will need a large batch of standard 20-second royal icing. 20-second refers to how long it takes to flatten out, or the thickness of the icing. It's quite thick, but thinner than standard frosting. Separate the white icing evenly into 6 bowls. Tint each icing with food coloring, red, orange, yellow, green, blue and purple (indigo). Use plenty of color, the icing should be fairly intense. Using a tall glass, put a disposable piping bag inside, and turn the edges of the bag over the glass. Then fill the bag with icing. Repeat for each color.
  3. Use a ruler and a baking marker (found at the craft store - its an edible magic marker) mark a dotted line an eighth of an inch or so all the way around the cookie, to make a border. Then measure the area inside the dotted line at its widest point, and divide that area by 6. Mark five even lines across that area, to make six stripes for color.
  4. Fill in the colored stripes using the "fill and flood" method. To do this, snip the tip of the purple icing piping bag, and outline the last stripe you just drew. Then fill in the out line right down the middle of the stripe inside the outline. Using a toothpick or other sharp tool, swirl the icing to fill in between the purple outline and the purple inside stripe. It will lay down flat a few seconds after you put the cookie down. Allow to set up a few minutes, then using the same technique, lay down the other colored stripes from right to left. Purple, blue, green, yellow, orange, red. Once the cookies have set a bit, then pipe a red outline.
  5. The rings are made from pre-made yellow fondant, cut into strips and rolled into ring shapes. The gold is edible glitter mixed with some lemon extract to make gold paint, and painted on the rings. Once they are dry press them carefully onto the frosted cookies.
