Kids Make Gifts! Hamantaschen
Author: Evermine
Type: Dessert

Ingredients
  • ¾ cup butter
  • ¾ granulated sugar
  • ¾ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3½ cups flour
  • 3 tablespoons cornstarch
  • 2 tablespoons baking powder
  • 2 large eggs
  • raspberry jam
Instructions
  1. Beat together the butter, sugar, salt and vanilla extract.
  2. Add the flour, cornstarch, baking powder and eggs, and mix until the dough comes together.
  3. Divide the dough in half, forming each half into a plump disc shape and refrigerate for 1 hour.
  4. Preheat the oven to 375 F.
  5. Generously flour a flat, clean work surface, place the dough in the center and generously flour the top of the dough as well.
  6. Roll out the dough using a rolling pin or a wine bottle, until it is ⅛" to ¼" thick.
  7. Use a 2¼" round cookie cutter to cut out circles of dough placing each circle on a baking sheet.
  8. Place a teaspoon of raspberry jam in the center of each circle.
  9. Dip your fingers in a little bit of clean water and run them along the outer portion of one circle, until it is damp all the way around.
  10. Bend three sides of the circle upward and toward the center, pinching together the corners that are created. Pinch gently, but firmly enough to create a seal.
  11. Repeat the last two steps for each of the dough circles.
  12. Bake for 9-12 minutes, until the bottoms and sides of the dough become golden brown.
  13. Some jam may spill from some of the cookies during baking, but that's ok! Keep and enjoy those for yourself and give the pretty ones as gifts!

This will be adorable! Please note that you’ve accidentally omitted jam off the ingredients list. 😉
