Cinco de Mayo is right around the corner, but with the weather here in Portland being so unpredictable, my friends and I didn’t want to take any chances…so we celebrated early this year! On the first warm sunny day, a buddy of mine decided to celebrate Cinco de Mayo with a bbq and mexican feast. No Cinco de Mayo fiesta is complete without margaritas, that’s where I stepped up and brought him this unbelievably delicious homemade margarita mix! It’s easy, cheap and way better than any pre-made mix on the market and it was a huge hit!
• 1 cup of lime juice or about 10 limes
• 3 cups of water
• 1 cup of sugar
• 1 tablespoon of coriander
• 1/2 cup of fresh cilantro
Step 1: Mix the water, lime juice, coriander, and cilantro in a pot. Bring to a slow boil.
Step 2: Stir in the sugar until it’s dissolved.
Step 3: Take off heat until cool and then strain into a bottle.
That’s it! A shot or two of tequila, ice and your new margarita mix in a salt rimmed glass. A simple and delicious Cinco de Mayo drink and the best part is, you can have it anytime of the year!
