Our Taylor turns eight on Halloween, so we are making some little favors for the party using (of course) a classic Halloween goodie, pumpkin seeds. Crunchy and slightly salty! Caylie and I made them, and they are, of course, simple and adorably cute.

Use organic shelled pumpkin seeds if you can find them. A few go a long way, so you will not need to get a lot. One cup makes 14-16 little envelopes of treats.

Fill a bowl with lukewarm water and add salt until it “tastes like the sea”. This will be about a tablespoon of salt to a quart of water. Stir, and when the salt is dissolved, pour in the pumpkin seeds and stir just enough to make sure the seeds are evenly mixed. Soak for 4- 6 hours. Drain well. Place on a lightly buttered cookie sheet or jelly roll pan (I prefer a jelly roll pan because, when stirring, it’s easier to keep the seeds in the pan). Sprinkle with additional salt if desired.

Bake at 310 degrees for 20-30 minutes, removing from oven every five minutes and stirring so the seeds at the edge of the pan are moved to the center. Check and stir every five minutes until all seeds are evenly golden.

Allow to cool. Pour 1 tablespoon of seeds in each small glassine envelope, seal with a small circle label, and decorate the front of the envelope with a personalized rectangle label.
