Triple Cheese Beer Spread
What a perfect spread for a St. Patrick’s Day party, because it’s excellent on crackers and goes perfectly with the beer. Actually, the beer is in it. I confess that I have to do some soul-searching before serving this spread, because it’s so hard to stop eating. If you want to enjoy it with a little less guilt, serve it for lunch on a whole-grain bread, along with a hearty soup like French Market Soup (recipe coming soon).
Triple Cheese Beer Spread
• 1/2 pound sharp cheddar cheese finely grated
• 4 oz blue cheese
• 4 oz cream cheese
• 1 tsp dill weed
• 1/2 tsp paprika
• 1/4 tsp garlic powder
• 1/8 tsp cayenne powder (or to taste)
• 1/2 cup Guinness draft beerAdd all together in a food processor or blender, blend until smooth. Server at room temperature with crackers or bread. Makes about three cups.
To prepare as gifts I packaged my spread in Weck canning jars and decorated them with circle labels and twine.
